2021 Le Vin Du Rosier
Le Vin du Rosier is a celestial superwine, made from grapes grown from the thorn of a rose. Otherwise known as Garnacha. In 2021 it was grown in Tabilk, Goulburn Valley. 100% Destemmed, gently hand plunged over 10 days. Immaculately conceived or maybe a wild fermentation. 2 months in old oak.
Boisterous red berry fruit, blood orange pith and fresh cut dry grass. Soft fluffy tannins and mouth-watering acidity
Mataro grown by the Boxgrove Vineyard, on Taungurung land. 50% whole bunch. 50% destemmed. 8 days. No touchy. No pumpy. Pressed and raised in tank. A complex quaffer. Graphite minerality with dark cherry, red apple, allspice, white pepper with a splash of rose petal.
Cabernet Sauvigon and Sauvignon blanc grown on Wurundjeri land. Fresh, frisky and slurpy. Lightly worked, tank made. Good chilled. Good not chilled. Dark fruits, cherries, strawberries with floral overtones.
