2020 ‘Vin de Fin’ Pet Nat, made from Viognier, grown in Tabilk, Goulburn Valley. Hand picked then straight pressed into stainless steel. We bottled this at the tail end of ferment, when there was around 12g/L sugar left in the ferment. Spent 4 months on lees, in bottle before being disgorged. Spontaneous ferment, no additons, no SO2.
