THESE 3 RIPSNORTERS ARE FRESH OFF OUR NEW DIXONS CREEK WINE FARM, ON WURUNDJERI COUNTRY. 

Mostly south facing slopes with cooling effects from nearby hills. Grey-red sandy loam over clay. Farmed with soil well-being a priority. The 2021 vintage was stella. Cool and dry. Natural acids off the hook. Total elegance. Beauty! These wines were hand picked in February and March. Walked to the top of the vineyard and into the winery | Pressed | Wild Fermentation + tiny amount of the devils dandruff (SO2) at bottling. 

We love this vineyard, this land, our mother earth.

2021 Elton  - Chardonnay grown by us at the Finyard in Dixons Creek, on Wurundjeri Country. Grown thoughtfully and sustainably without use of herbicides, chemical fertilisers and pesticides. Handpicked then pressed directly into our favourite tank “Elton”; a tall thin stainless steel tank resembling a rocket. Elton kept the wine tight and fresh, whilst limiting contact with the ferment lees it sat on. Bright and frisky. Grapefruit zest, cashew nut, crisp lingering acidity with a touch of oyster shell.

RIESLING GROWN ON THE HOME BLOCK IN DIXONS CREEK, ON WURUNDJERI COUNTRY. GROWN THOUGHTFULLY AND SUSTAINABLY WITHOUT USE OF HERBICIDES, CHEMICAL FERTILISERS AND PESTICIDES. HAND PICKED BY FRIENDS AND FAMILY. PRESSED AND TANK FERMENTED ON SITE. WILD FERMENT. ON FERMENT LEES FOR 3 MONTHS. PICKED LEAN, BOTTLED FRESH. FRESHLY CRACKED CORIANDER SEED, MAKRUT LIME LEAVES AND MEYER LEMONS

2021 FINONA

Made in collaboration with our friends at Winona Wines, in Manly NSW. $2 from every bottle will go to the Foundation for National Parks & Wildlife, who help to protect Manly's endangered Penguin Colony from Fox predation. 

Savagnin, Pinot Noir & Cab Sav, grown on Wurundjeri Land, at the Finyard in Dixons Creek. Mostly south facing slopes with cooling effects from nearby hills. Grey-red sandy loam over clay.

Grown thoughtfully and sustainably without use of herbicides, chemical fertilisers and pesticides. Soil well-being a priority. Hand picked in March. Walked to the top of the vineyard and into the winery | Pressed | Wild Fermentation + tiny amount of the devils dandruff (SO2) at bottling.  Wild fermentation. Co-fermented as whole bunches with a couple foot pressings. 8 days in the picking bin, then pressed to old oak.

On the palate > {Turkish delight, meyer lemon, strawberries, white chocolate, goji berry, watermelon} > picture all these steeped in melting soft serve ice cream.
