Fermented wild, handled gently, and guided more than pushed. Sees time in seasoned oak to round the edges without softening the spine. It’s about tension — fruit and earth, grip and brightness.
In the glass: sour cherry, blood plum and crushed raspberry, layered with dried herbs, ironstone and a flicker of amaro bitterness. The tannins are firm but fine, carrying that classic Heathcote chew, while the acidity keeps everything lifted and deliberate.
